So this adobo seasoning recipe truly gives your food the authentic spanish flavor you’re looking for in your spanish (or any) cooking.
And any latina, hispanic, or south/central american home cook should be no stranger to our best friend in the kitchen, Goya adobo seasoning mix.
I mean we take “all purpose” seriously and put that thing on everything!
What is adobo seasoning?
It is an all purpose seasoning blend used in Latin and Caribbean cooking like Puerto Rican, Cuban, Dominican, Spanish (Spain), Mexican and so many more!
Think of this as a typical seasoning salt, but spanish.
What is adobo seasoning used for?
It can be used for anything savory. Adobo seasoning can be used for poultry, pork, beef, venison, fish, vegetables, etc.
I seriously use it in everything; soups, sauces, beans, bone broth and even sofrito! Nothing is safe.
I always say to use as you would a seasoned salt because it can be salty if you use too much.
It can be used as a dry rub or a wet marinade. To use as a wet marinade, just add orange juice, lime juice, or vinegar, depending on what you’re making.
What does adobo seasoning taste like?
There is such a complex depth of flavor that makes this difficult to describe. It tastes salty, tangy, savory, subtly garlicky but just overall amazing!
Adobo does a great job of complimenting and bringing out the best savory flavors in your dish. Simply put, adobo makes chicken taste like great chicken.
Is adobo seasoning spicy?
No. But it can be made more or less spicy with some minor adjustments. Omit the black pepper if you’re not looking for any heat at all. Add chilli flakes or cayenne pepper to up the spice level if that’s what you prefer!
Goya adobo in stores is sold many ways with the tw omost popular being one with black pepper and another without. So in this recipe, that makes the black pepper optional! In my opinion, it is not spicy even with the pepper, it just adds a depth of flavor. And honestly, both are delicious!
Is adobo seasoning gluten free?
Yes! Since it is just an all purpose blend of different spices, it does not contain gluten.

Goya adobo seasoning recipe
This authentic adobo seasoning recipe comes together so quickly with pantry essentials that every home cook should have already!
Equipment
- Mortar and pestle or coffee grinder
- Glass jar for storing
Ingredients
- 1/4 cup salt (only use 3 tbs if you’re using iodized salt )
- 11/2 tbsp dried oregano
- 2 tbsp garlic powder
- 1 1/2 tbsp onion powder
- 2 tsp black pepper
- 1 tsp ground tumeric
- 1 tsp ground cumin
Instructions
- Grind oregano in the mortar and pestle until it is the consistency of the onion powder (If using a coarse salt, grind salt with oregano until fine)
- Transfer oregano to a glass container
- Add garlic, onion powder, black pepper (if using) tumeric, and cumin
- Close your container and mix!
- Your homemade goya adobo seasoning is ready to use!
Tips for the best adobo seasoning recipe!
- Use as you would seasoned salt. A usual serving of adobo is 1/2 tsp, but use as desired!
- Store in a cool, dry place for up to a year (Peak flavor lasts about 6 months.)
- If humidity gets into your seasoning, (usually happens to me when taking the jar our for cooking) it will get clumpy over time. Simply give your seasoning an aggressive shake to break them up
- For the OG Goya adobo (blue top), omit the black pepper and cumin
Salt free Goya adobo seasoning recipe
Adobo is typically used as a seasoned salt or all purpose seasoning. If you’re looking for a reduced sodium option, you can simply reduce the salt content to 2 tbsp.
If you’re looking for a salt free option, simply omit the salt and mix the rest of the ingredients together for flavor.
- 11/2 tbsp dried oregano
