Method
- Whisk all of the wet ingredients - milk, yogurt, pumpkin puree, maple syrup, and vanilla extract - in a medium bowl.
- Add in dry ingredients - rolled oats, chia seeds, pumpkin pie spice
- Mix until combined
- Pour in glass container and cover
- Store in fridge overnight
- Take out in the morning, top with your favorite toppings and enjoy!
Notes
To make vegan pumpkin pie overnight oats, simple replace the milk and greek yogurt with your favorite plain or vanilla dairy free options - almond, cashew, soy, coconut, or any other!
To add protein, simply mix in protein powder or nut butter to your oat mixture.
