Grease 9 x 13 pan
Chop bread into in cubes and place in greased 9 x 13 pan
In a large bowl, combine the rest of the ingredients (pumpkin puree, milk, cream, eggs, sugar, pumpkin spice, and vanilla extract)
Pour mixture evenly into the pan, over the chopped bread
Cover
Let sit for 3-4 hours or overnight in the fridge
Bake @ 350 for 45 min- 1 hr or until the casserole is no longer jiggly (You may need to tent with foil around the 30 min mark if your casserole is browning too fast)
Remove from the oven when ready and let cool for 5 min before serving
Top with powdered sugar, maple syrup, fruit, or any other toppings of choice
Place leftovers in the fridge for up to 2-3 days
