Pumpkin French Toast Casserole

This is the perfect quick or overnight pumpkin french toast casserole! Serve with maple syrup, powdered sugar or any other desired toppings!

Ingredients
  

  • 1 loaf of day old bread of choice brioche or french bread are best
  • 1 cup pumpkin puree
  • 1 cup milk
  • 1 cup heavy cream
  • 6 large eggs
  • 3/4 cup sugar
  • 1 tbsp of pumpkin spice
  • 2 tsp vanilla extract

Method
 

  1. Grease 9 x 13 pan
  2. Chop bread into in cubes and place in greased 9 x 13 pan
  3. In a large bowl, combine the rest of the ingredients (pumpkin puree, milk, cream, eggs, sugar, pumpkin spice, and vanilla extract)
  4. Pour mixture evenly into the pan, over the chopped bread
  5. Cover
  6. Let sit for 3-4 hours or overnight in the fridge
  7. Bake @ 350 for 45 min- 1 hr or until the casserole is no longer jiggly (You may need to tent with foil around the 30 min mark if your casserole is browning too fast)
  8. Remove from the oven when ready and let cool for 5 min before serving
  9. Top with powdered sugar, maple syrup, fruit, or any other toppings of choice
  10. Place leftovers in the fridge for up to 2-3 days
