This is the perfect quick or overnight pumpkin french toast casserole! There are few things better than waking up on a brisk Saturday fall morning to a warm, comforting breakfast! Serve with maple syrup and some powdered sugar or any other desired toppings!
Overnight pumpkin french toast casserole
The easiest way to prepare this is the night before for a quick overnight pumpkin french toast casserole you can just pop in the oven first thing in the morning! I love breakfast that can be prepared the night before so it creates less work in the morning but you are still able to have a warm, homemade, from scratch meal!

One of the most stressful cooking days of the year is thanksgiving. Which makes this is a great thanksgiving french toast casserole for that crazy day of cooking ahead! Just prep it the night before (along with all the other prep for thanksgiving day), and pop it in the oven in the morning!
Ingredients
- 1 loaf of day old bread of choice (brioche or french bread are best)
- 1 cup pumpkin puree
- 1 cup milk
- 1 cup heavy cream
- 6 large eggs
- 3/4 cup sugar
- 1 tbsp of pumpkin spice
- feel free to make my homemade pumpkin spice blend if you don’t have any on hand
- 2 tsp vanilla extract
The best part of this recipe is that all of the ingredients (with the exception of pumpkin) are on my list of essential pantry ingredients so you should have them all on hand on any given day!
Instructions
1.Grease 9 x 13 pan
2. Chop bread into in cubes and place in greased 9 x 13 pan
3. In a large bowl, combine the rest of the ingredients (pumpkin puree, milk, cream, eggs, sugar, pumpkin spice, and vanilla extract)
4. Pour mixture evenly into the pan, over the chopped bread
5. Cover
6. Let sit for 3-4 hours or overnight in the fridge
7. Bake @ 350 for 45 min- 1 hr or until the casserole is no longer jiggly
8. Remove from the oven when ready and let cool for 5 min before serving
9. Top with powdered sugar, maple syrup, fruit, or any other toppings of choice
10. Place leftovers in the fridge for up to 2-3 days

French bread is the best bread for any french toast casserole, but it also requires the longest soak time. Brioche is another great option. Arguably though, you could use any somewhat stale bread! Truth be told, my favorite thing to do is buy clearance bread super cheap and use that! Safe to say i’ve used many different kinds and it always tastes delicious! My favorites would have to be french bread, brioche, and even bagels are amazing in a bagel french toast casserole!
How long will french toast casserole last in the fridge?
If you have any leftover pumpkin french toast casserole (which I doubt because of how good this is!), the simply place it in the refrigerator. cover the casserole with plastic wrap and it should last up to 3 days in the fridge until you’re ready to re-heat!
How long to re-heat french toast casserole?
To re-heat your french toast casserole, let dish sit out of the fridge for 15-20 min to bring dish to room temperature. Then bake at 350 degrees for about 20 minutes or until warm throughout.
French toast casserole also reheats well in the microwave.

Best practice is to heat up your casserole from room temperature so it has less time and less of a chance to dry out in the oven. It is ideal to cover your casserole with foil to prevent moisture loss as well.
Tips for making the best pumpkin french toast casserole

With regular french toast, the bread cannot soak too much or it will get soggy. French toast casserole is the opposite! It requires a much longer soak time and it actually gets better with time!
The longer the casserole soaks, the less time it takes to bake and the less soggy. This is anywhere between 3 hrs to 24 hrs or overnight.
Use slightly stale bread so that it absorbs more of the custard. This will give you a soft, and dense texture rather than a thin, wet, and soggy texture

- Place leftovers in the fridge for up to 2-3 days
