In a large bowl, sift together flour, baking powder, salt, sugar, and cinnamon
Add melted butter, egg, milk, and vanilla -- be ready with whisk! Mix quickly so the milk doesn't solidify the butter
Use a wire whisk to whisk until combined
Set batter aside and let it rest for 5 min while preheating pan
Preheat nonstick pan or griddle on med to med-high heat
Grease cooking surface
Use 1/4 measuring cup to pour batter for even fluffy pancakes
When the underside is golden brown and bubbles appear on the surface, flip with a spatula
Repeat with remaining batter
Serve with honey, organic maple syrup, fruit, or enjoy plain!
