The Best Fluffy Pancakes Recipe from Scratch!

This is our go-to fluffy pancakes recipe! Not too thick and not too thin, perfect for breakfast or brinner! I usually double or even triple it and freeze for easy and fast breakfasts on busy mornings.

Ingredients
  

  • 1 1/2 cups all purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt if using unsalted butter, add an extra 1/2 tsp of salt
  • 1 tbsp white sugar use sweetener of your choice
  • 1/2 tsp cinnamon (optional)
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp butter, melted
  • 1/2 tsp vanilla extract (optional)

Method
 

  1. In a large bowl, sift together flour, baking powder, salt, sugar, and cinnamon
  2. Add melted butter, egg, milk, and vanilla -- be ready with whisk! Mix quickly so the milk doesn't solidify the butter
  3. Use a wire whisk to whisk until combined
  4. Set batter aside and let it rest for 5 min while preheating pan
  5. Preheat nonstick pan or griddle on med to med-high heat
  6. Grease cooking surface
  7. Use 1/4 measuring cup to pour batter for even fluffy pancakes
  8. When the underside is golden brown and bubbles appear on the surface, flip with a spatula
  9. Repeat with remaining batter
  10. Serve with honey, organic maple syrup, fruit, or enjoy plain!
