Many boxed pancake mixes provide empty calories and the enriched wheat flour quickly converts to sugar in our body. They contain unnecessary oils (palm, canola, soybean) and added sugars (sugar AND dextrose). Some even go so far as to add artificial colors and natural flavors.
Quality ingredients equals quality pancakes
- organic all purpose flour
- baking powder
- salt
- white sugar
- cinnamon (optional)
- milk
- egg
- butter
- vanilla extract (optional)
- Organic maple syrup
I use organic unbleached all purpose flour.
Organic butter. Okay, if you haven’t discovered organic butter yet, you are missing out! The flavor is incomparable.
And farm fresh organic eggs (I get from a friend).
To pour on top, I skip the artificial syrup and use organic maple syrup. I find it is sweeter and tastes better anyway!
You can also use raw or organic milk. The ingredients you use truly make a difference!
How to cook the best fluffy pancakes?
- In a large bowl, sift together flour, baking powder, salt, sugar, and cinnamon
- Add melted butter, egg, milk, and vanilla – be ready with whisk! mix quickly so the milk doesn’t solidify the butter
- Use a wire whisk to whisk until combined
- Set batter aside and let it rest for 5 min while preheating pan
- Preheat nonstick pan or griddle on med to med-high heat
- Grease cooking surface
- Use 1/4 measuring cup to pour batter for even fluffy pancakes
- When the underside is golden brown and bubbles appear on the surface, flip with a spatula
- Repeat with remaining batter
- Serve with honey, organic maple syrup, fruit, or enjoy plain!
How to make the best fluffy pancakes?
The secret to the pancakes you end up with is in the batter! Too thick and the pancakes will be undercooked in the center. Too thin and the pancakes will not fluff up at all.
What makes pancakes too fluffy?
Too much baking powder makes pancakes very puffy with a chalky taste. One the other hand, not enough baking powder will create a flat and limp pancake.
You will notice there is no baking soda in this recipe. Baking soda only rises when it reacts with an acid (like buttermilk or sour cream).

If you’re using unsalted butter, add an extra 1/2 tsp of salt.
Do not overmix! We don’t want flat pancakes.
When to flip fluffy pancakes?
The bubbles will tell you! They start on the outside, but when the bubbles come through the middle of the pancakes, that’s when it is ready to flip!
